Two Layers of Heaven

I have been noticed some Cookie-Topped Brownies floating around the blog world lately and I knew I had to make my own vegan version of them for my friend’s college graduation party tonight.

These babies are two layers of sweet, rich, decadent HEAVEN!  The soft, fluffy brownies are supplimented by a crispy, chewy chocolate chip cookie topper.  Why choose either a brownie or a cookie, when you can have both?

Chocolate Chip Cookie-Topped Brownies

makes 16 sweet treats

Brownie Layer:

1 cup sugar
1 cup whole wheat pastry flour
1/2 cup applesauce
1/3 cup water
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chocolate chips

Cookie:

1 cup whole wheat pastry flour
1 tsp baking powder
1/4 cup sugar
1/4 cup canola oil
1/2 tsp vanilla
3 tbs water
a pinch of cinnamon
1/2 cup chocolate chips

Mix together the brownie and cookie ingredients separately.  Pour the brownie batter into the bottom of a parchment paper lined 8×8 inch pan.  Spread the cookie layer over the top of the brownie layer.  Bake in a 350 degree oven for 40 minutes or until a toothpick inserted in the middle comes out clean.

Wow!  I knew these would be good, but jeez, you just have to try them for yourself!

    Rock on! I’ve made something kind of like this but the cookie part was more on the cookie dough side.

    Wow. Those look incredible. I could have used one of those the other night when I was craving something chocolate and decadent. (I know what I’ll make next time!)

    I’ll be making these again tonight to take to a get together tomorrow. They’re amazing and everyone always loves them! Never knows they’re vegan, either :)
