Another One Bites The Crust

Dark Chocolate Dreams

I have serious love for Peanut Butter and Co’s spread of fabulous peanut butter flavors.  One of my top favorites is Dark Chocolate Dreams.  I love to spread it thick on toast, as a topping on non-dairy ice cream, or even straight from the jar!  Another great way to use this rich and delicious treat is to bake with it!

This morning, I took my favorite blondie recipe and got to work!  Instead of mixing in extra ingredients, I took out my jar of creamy, chocolate peanut butter and scooped a generous amount into the pan, on top of the blondie batter.  I used a knife to swirl the peanut butter into the batter.  You can sort of see the swirls on top of half of the blondie block, in the photo below.

Dark Chocolate Swirled Blondies

adapted from VeggieGirl’s blondies

3/4 cup almond milk mixed with 3/4 tsp apple cider vinegar
1/4 cup coconut oil (melted)
1 cup sugar
2 teaspoons pure vanilla extract
2 teaspoons molasses
1.25 cups flour
3/4 teaspoon baking soda
spoonful of peanut butter

Preheat the oven to 350 degrees and line your 8×8 baking pan with parchment paper.

Mix together the nondairy milk and apple cider vinegar.  To the milk mixture, add the oil, sugar, molasses and vanilla extract.  Sift in the flour and baking soda.  Stir til combined.  Pour the batter into your pan and spoon a scoop of peanut butter on top on the batter.  Use a knife to swirl in the peanut butter.  Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.  Let cool and cut into squares.  Enjoy!

Mmmmm, this recipe makes a tender, fluffy blondie.  This sweet, moist treat is taken to a new level when supplemented by the rich, creamy dark chocolate peanut butter.  If you love peanut butter, you must try this baked good!
