I saw on Hangry Pants this morning that Heather posted about getting to know each other more, and I think that’s a great idea! After a post a fabulous lunch I had this afternoon, I am going to post three things from my house that represent me and my life
A while ago, Gena from ChoosingRaw.com posted a recipe for Raw Cucumber Rolls over on Eat, Live, Run and I’ve been drooling over them ever since! I decided that today would be the day for this quick, fresh, and healthy lunch!

The process is simple. All you’ve got to do is thinly slice a cucumber (I used a vegetable peeler), and then layer up your fillings! The fillings I chose were sliced avocado, carrots, sprouts, and a bit of romaine lettuce.

The Cucumber Rolls tasted like the spring rolls I know and love from Whole Foods, just a heck of a lot cheaper and very fresh! They were crunchy from the raw veggies and very flavorful. Perfect! I’m a simple gal, and chose to dip mine in soy sauce.

I threw together a quick bowl of fruit to accompany my delicious lunch. In my cute yellow bowl, there was honeydew melon balls, sliced strawberry, gala apple, and cubed pineapple! The fresh fruit was topped off with a sprinkling of coconut and a bit of Kashi Go Lean! Crunch cereal. I need a bigger cutting board!
Getting To Know You
Heather suggested that we post photos of three things from our homes that represent us or our lives in anyway. I think this is a great idea! I encourage you to do the same, and let me know when you do. I want to get to know each and every one of you more!
1. My Bookcase

I doubt there is anything in my home that represents me more than this bookcase! It displays all my passions, from my favorite movies, video games, cookbooks, and my dog, Pokey! It’s got my three little cupcakes that I adore, a tea pot, and even a big ‘N’, for my first name, which is Nicole!
2. My Hula Hoop

I LOVE hooping. I am proud to say that I’ve got a natural ability and it’s one of my biggest passions! I love trying out new tricks. I frequently hoop while I’m watching TV or even reading. I practice for at least 20 minutes a day, every day! It’s very calming and rewarding.
3. My Office

I just moved and I don’t have (or can afford) a couch yet and didn’t set up my desk, so I currently blog from my yoga mat and a couple pillows on the floor! It’s not very comfortable but it gets the job done! I spend a lot of time editing photos and writing on the computer so I’m on this yoga mat a lot
These are my pillows and comforter from my bed and I actually fell down the stairs when I was carrying them down this morning!! Ouch!
I hope you guys enjoyed that as much as I did! Now I want to see/hear more about you!





I was actually thinking about posting some pictures of my room and such. Even more reason!
p.s. your office looks comfy! If you don’t mind my asking, where’d you get the middle pillowcase?

hula hooping?! that is awesome! i was always awful at it.. so i’m very impressed you can go for 20 minutes a day.. what a fun workout!

yeah girl! i am a hooping fanatic too! we make our own hoops and my favorite lazy summer day activity is hoopin in our swim suits in the sun! soo fun. i can only go from my wrist down to my waist and my waist up to my wrist (above my head) but i am working on my tricks!

I recently started hooping, though I’ve been using a hoop from the toy store because I’m too inept to make my own and too broke to buy a nice one. How did you get started doing tricks, and what kind of tricks do you recommend for beginners? Especially very uncoordinated ones, ha…

That’s so cool that you hula hoop! I always wanted to be a star hula hooper when I was younger. That never really happened. I was actually terrible at it. It’s so much fun though! You should make a vid and show us your skills haha.

i looove the idea of the cucumber rolls. i have a new mandolin so i would love to try it! i’m sure they would be good with other veggies or tofu inside.

How cool that you can hula hoop! I tried it the other day, after not doing it in YEARS, and MAYBE got it going for a good 10 seconds. Maybe. I think we should get to see some hula hooping videos of you!
