Rain, Rain, Go Away..

The weather here has been so awful lately!  It’s been one big constant rain storm.  The sun did come out for a little today so I could squeeze in a quick bike ride before settling down to a lovely lunch.  I biked to Whole Foods to pick up some produce and the baby artichokes stuck out and inspired my lunch-time eats.

I was inspired to create a dish of Grilled Lemon-Caper Artichokes and Asparagus. The process is very simple.  I heated up the George Forman grill while trimming the baby artichokes.  Once the grill was sufficiently heated, I sprayed it with olive oil and set the vegetables (arichokes, asparagus and onion) in there until they were tender.  Once done grilling, I mixed them up in a bowl with half of a lemon’s juice, capers, salt, pepper, and lemon zest. Can it get any more simple?  I paired the vegetables with a spinach salad and scoop of hummus.

As usual, I enjoyed a lovely bowl of fresh fruit after lunch.  In my bowl was a mixture of grapes, strawberries, and kiwi.

While chopping, I noticed myself and my fruit in the reflection of this jar.  I think it’s a pretty cool shot!

      Yep, I do eat it with the skin on!! I kind of like the added texture (and I’m lazy). I’m a weird-o!

    that IS a cool shot! and i love the lemon at the end!
    thanks for all your photography advice and encouragement, i’ve been taking my food shots on manual and i think it’s helping. my other problem though is i don’t really have a good place with a lot of indirect light. our kitchen counter and table are kinda far from the window, and there’s an overhang outside of the window, so it’s just kinda eh. but i’m gonna keep trying with youa nd your great photos as my inspiration!

    Another impressive dish! I’ve never had baby artichokes before–are they as labor intensive to prepare as regular artichokes?

    yes to the george foreman! I always felt secretly happy when I would use my GF (sadly left in Canada when I made my move to Brussels) to grill my veg and fu: after watching all of those meat based commercials whilst GF was trying to sell his grill. I felt like a veg rebel….how silly. Your meal looks awesome! Hope the rain goes soon.

    It’s been such lousy weather here too, it’s rained for about two weeks and it’s just so depressing! I haven’t been able to go out for my run in days and it’s making me feel so anxious! I need to get out and move!
