Killer Curry

Taking a break from this majorly packed day, I headed into the kitchen to whip up Roasted Cauliflower Curry with Toasted Almond Rice (from the Big Orange Book) for lunch.  I found some beautiful bunches of cauliflower at the grocery store this morning, which was quite exciting to me.  This probably wouldn’t be so exciting to a normal human being, but what can I say?  I’m a veggie nerd.  For all of you who don’t know, I have a love affair with roasted cauliflower.  I almost ditched the curry and noshed on the roasted cauliflower, plain!

This curry is pretty quick and extremely easy.  I must say, I did have a little trouble at first.  I realized I had misplaced my curry powder, so I threw in a coriander, cumin, chili powder, and tumeric to create my own makeshift curry powder.  Also, when I was toasting my nuts I grabbed the handle and it was burning hot!  Ow.  I need new pans!  These are pretty dangerous; I don’t think that the handles are supposed to get so fiery.

RayRay’s curry is definitely not lacking in flavor, either!  The curry sauce includes granny smith apple, onions, garlic, and ginger, among other ingredients.  I very much enjoyed the slight sweetness that the apple lends to the dish.  This is another recipe that produces a lot and I’m so glad to have leftovers!  I’m thinking a Curry Cauliflower Wrap to bring for the car ride tomorrow.

    Curry is my favorite!!! Can’t say I like raw cauliflower though…actually I don’t like raw broccoli either. But throw anything in a curry and I’ll eat it! haha

    I’m a huge curry fan – this sounds like a recipe that is right up my alley. I bet it will make for a great wrap tomorrow. Perfect way to have “curry to go”.
