16 Years of Friendship

Because I have been slacking on food photography lately, I decided to photograph a full day of food.  Of course, I forgot about this before I ate dinner, but it was boring anyway.

I started the morning with a sliced gala apple, topped with pumpkin flax granola and a side of persimmon mini-muffins.  It was a very delicious and filling breakfast.  I also drank quite a bit of french press coffee as well.

After breakfast, I decided to make some muffins to bring to my special lunch date this afternoon.  When I was starting to mix the ingredients together, I realized that I didn’t have any baking powder or baking soda left.  Nooo!  I walked down to street to Walgreens, but they didn’t have baking powder so I had to walk further down the road to Edge of the Woods, where I finally found it.

So, the muffins.  I chose the Quinoa Raisin Muffins from 500 Vegan Recipes.  What a great recipe!  The recipe not only incorporates quinoa and raisins into a protein packed muffin, but peanut butter as well.  Goodness.  The spice blend is perfect as well!  This is the first recipe I’ve tried from the book, but every single one of them sounds delicious.

I packed the muffins up in a sketchy paper bag and headed off to meet my date- Brynne from Brynne in Balance!  Brynne and I have been friends FOREVER!  Seriously, since kindergarten.  I think that’s like 16 years of friendship.  We met when at recess- I was playing airplanes with a different friend when Brynne approached me asked if she could play too, but I just flew away.  Polite, I know.  It was so great to see her again!

Of course, we hit up the Whole Foods salad bar!  I piled my bowl full of romaine, butternut squash, black beans, tofu, guacamole, garlic and roasted carrots.  It was incredible.  The roasted carrots were incredible.  I’ll definitely be making this for Thanksgiving.

Brynne and I wandered around Whole Foods for a while!  I found a couple things I am very excited to try- especially the agave sweetened non-dairy yogurt.  I also picked up  canned rice and beans, canned pumpkin, bananas, peppers, coffee, english muffins, and a Pure bar.

Somehow I managed to not spend all my money there.  I like Whole Foods, but it is so expensive.  It’s not really worth it for me to make the trip there when I live a few blocks away from Edge of the Woods.  Plus, Edge of the Woods is a totally vegetarian grocery store and I’d much rather support a business like that.  Either way, I very much enjoyed the hot bar and my time catching up with Brynne!

For dinner I ate an english muffin with white chocolate peanut butter and strawberry jelly.. with a side of pickles.  Then an apple.  I love pickles and peanut butter together.  It’s a winning combo.  My sister Megan understands the love, she had a peanut butter and pickle sandwich for lunch today :)

    pb and pickles…always reminds me of pregger women…hehe. or maybe it’s just cause i don’t like pickles. haha.

    Peanut butter and pickles? Together? Oh my….this is so weird I’m going to have to give it a try.

    I love your day of meals, everything is lovely.

    I’ve only been to Whole Foods once and it was overwhelming. Next time I’m back in the states I will make sure to appreciate it even more, the salad bar eats look phenomenal.

    Peanut butter & pickles is my fave!
    I used to work at the PB & Co. restaurant in Manhattan, and ‘The Pregnant Lady’ is exactly what our pb & pickles sandwich was called — I always ate it with our cinnamon raisin peanut butter, and I think I had it every day I worked for about a year! If you’re feeling adventurous, try it with the cinnamon raisin, and if you’re feeling even more adventurous, add some coconut — I promise it’s good!

    Oooo, I’d like to try that So Delicious plain yogurt! I don’t like pickles…but love peanut butter and lettuce or spinach!

    Whole foods is super fun, but really outrageously expensive!

    And peanut butter and pickles?? They are two of my favorite things :-)

    I was wondering where you got the agave sweetened yogurt. We don’t have that in our WF (near Boston).

      I got it at Whole Foods in Connecticut. It’s the only place I had seen it. It was actually pretty vile though, it was totally solid. This makes me think that I got a bad one, though.

    Cute post! And thanks for posting about the agave yogurt. I stopped eating non-dairy yogurts a few months ago cause of the sugar, so I’ll keep a look out for these!
