Thanksgiving Treats

I was so excited to finally have some down-time today to get into the kitchen and bake for Thanksgiving tomorrow! I didn’t have a clear pan of what I wanted to make, but I decided to work with what I had. I ended up with Pumpkin Oatmeal Cookies, Banana Muffins, and Pecan-Pumpkin Spice Fudge!


Pumpkin cookies usually come out a bit too cakey for my liking, but these pumpkin oatmeal cookies are perfect! They have the texture of a normal oatmeal cookie, but with a pumpkin spin. I found this recipe at theppk.com. I am so impressed by the recipe! They are pretty gorgeous, too. I am quite sure these will be quite the crowd pleaser.
Next up, I turned to my favorite vegan baker, Hannah, for a recipe to use up my super ripe bananas. Hannah has got a recipe for Banana Pumpkin Spice Muffins on her blog. It seemed absolutely perfect!


You guys, I love muffins. I am a harsh muffin critic and it’s rare that I find a muffin that has the perfectly chewy muffin bottom that I love. I was so pleased when I unwrapped this muffin and revealed the nicely browned, chewy muffin bottom! It’s these little things that make me happy. Don’t be surprised if I show up with only muffin tops to Thanksgiving tomorrow!
For the Pecan-Pumpkin Spice Fudge, I turned to another recipe from Hannah, Five Minute Fudge! You can find this recipe in her book, My Sweet Vegan. I decided to change it up from just coconut fudge, to something a bit more holiday-esque. I followed the base exactly, but pressed glazed pecans on top before putting it in the fridge.

Oh, my, gosh!! It’s so rich and decadent. I stole a small bite to make sure it’s suitable. Oh, it is! I don’t know how I’m going to resist eating all of these treats before I get to Thanksgiving dinner.

I’m getting my food catered so I don’t think I’ll be doing much baking, but I might just have to make a pumpkin pie! It’s a must!

Those muffins look sooo good. Did you have pumpkin butter or did you just use canned pureed pumpkin? I need to make these!
I actually just used applesauce because I couldn’t find pumpkin butter. I was going to use the pumpkin puree, but I was saving it for the cookies
Hmm I am still undecided as for what to make for dessert tomorrow–I got some good ideas from this post though!
