A Very Vegan Thanksgiving

To get all of my loved ones together for the holidays, my friend Amy and I decided to throw a Vegan Thanksgiving!  It was quite the success!  Is there much better than hanging out and eating great food?  I think not!

Let’s see here..

So, I made cinnamon cupcakes with vegan buttercream frosting, put out some chips and hummus, baked sweet potato bread, cooked delicious punk rock chickpea gravy, homemade biscuits, roasted ginger brussel sprouts and carrots, double layer pumpkin cheesecake, baked a sweet potato casserole topped with pecan crumble and Dandie’s vegan marshmallows!  Oh, the sweet potato casserole.  I tried some before anyone got there and it was quite possibly the best thing I’ve put into my mouth.  I found the recipe on the Fat Free Vegan Blog.  Ahhhhmaazing, and topped with the whole bag of those cute, little expensive, hard-to-find Dandie’s marshmallows…

Incredibly intelligent me decided that I would brown the top and heat it up by placing it under the broiler…

Unfortunately for you, I was too much in a panic to snap a photo of the FLAMES but trust, it was scary.  While my friend Karli was smart enough to turn off the oven and both burners that were on, I scrambled around the house searching for a fire extinguisher.  I ran down three flights of stairs, grabbed it off the wall and finally made it back up stairs.  It took me a good minute to figure out how to use the thing, but I nearly cried when I sprayed this onto my beloved sweet potato casserole!  THE HORROR!  8 dollars worth of marshmallows… burnt to a crisp.. Anyway, I am just thankful that nothing else was hurt!  The guests starting arriving right after I pulled the trigger and were greeted to the delicious smell of whatever comes out of the fire extinguisher.  Beautiful.

After mourning the fact that no one would be able to try the most delicious dish ever, Amy showed up with the rest of the feast!  This girl went above and beyond!  We had three Celebration Roasts, two kinds of mashed potatoes, green beans, more gravy, and another sweet potato dish.  Amy’s friend Vanessa brought another delicious pumpkin pie!  We had so much delicious food.  I didn’t even think to snap a photo of the rest of the food, but I did manage to take one of my first plate.  This was so much more than enough for a little group of people over!

Everything was so amazing!  I really loved the celebration roast!  It was quite delicious.  Amy roasted it with applesauce, which was such a great idea.  I topped pretty much everything on my plate with the insanely good chickpea gravy.  Incredible!  The recipe is from Vegan with a Vengeance, I believe.  I’m serious, it’s GOOD!  I wish I had leftovers.

After dinner, we talked, laughed, tried to fix my xbox, and played games.  Yeah, we brought out the Twister mat!  It was quite hilarious.  There was a ton of Twister photos taken and I’ll surely show you when I get a look at them!  I brought out the pumpkin cheesecake and we ate it right their on the mat.  It was pretty good!

It was such a great day!  I am so thankful for my loved ones.  Everyone was gone by 9 and I was so happy to cuddle up in my bed.  I hope you all had a great weekend as well.

    Wow, that is quite an adventurous dinner! I’m glad everyone is safe, if not your sweet potatoes.

    Your photography is beautiful… I feel like I could reach into my computer and touch everything!

    Oh NO!!! Not the marshmallows! You have to watch them as they brown really really quickly and can catch on fire just as if you roasted them in a campfire… but I guess you already know this now.

    Here is a peek at my marshmallows on top of sweet potatoes. They expanded a bunch under the broiler. Much more than I expected so I used way too much marshmallow!

    Oh, and I am seriously jealous of that beer. Dogfish Head Punkin’ is my favorite. Can’t get that here in Utah.

    omg! burning marshmallows sounds insane..i would have freaked out! glad it all worked out though (minus the sweet potatoes)- everything looks so good!

    Everything sounds delicious! You guys really had a feast! Sorry about the sweet potato casserole though. Bummer about the waste of marshmallows, but I am just glad no one got seriously hurt.

    I never tried a vegan roast yet. I’ve been avoiding them because I’m not a big fan of faux meats. Everyone else seems to like them though, so maybe I should just try it!

    but oh no!! :) the sweet potato casserole!! but at least you got to try a bite! ;) that recipe sounds amazing though, i want to make it!… and twister, and xbox, so fun!

    good friends

    i am SO GLAD you were able to put it out, but i know it must have been painful to lose that beautiful casserole :( :(

    sounds like it was a great celebration anyway.

    I am still full from lunch, yet this post still made my stomach growl. What a feast!

    I tried that Celebration Roast for the first time at a vegan potluck a couple weeks ago, and I was impressed! I have never tried Tofurky because it doesn’t sound appealing to me, and for the past couple Thanksgivings, I’ve made seitan for the “main dish.” But dang, the roast was delectable! I might save myself some time next year by just making that!

    I’m glad you didn’t burn the house down. ;-)

    I’m so sorry to hear about the burning! That must have been very sad. But everything else looks beautiful and delicious and you were surrounded by friends so I’m sure you had a good Thanksgiving anyway, marshmallows or not ;-) Thanks for the lovely pictures and recipes!
