Animal Farm

We all know the feeling of not having enough hours in the day, especially around the holiday season.  I spent most days running around like a crazy woman, and typing away furiously on the computer at night.  I do keep long hours at times, to make sure I get my work done, and it’s imperative I have something to pick me up when I feel myself losing speed during the day.

This is where coffee short bread comes in!  While browsing My Sweet Vegan, I spotted this short and sweet recipe and I was undeniably smitten.  Oh, how I love buttery short bread.. and with a caffeine kick?  Perfect!  As I said earlier, the ingredient list is very short and the recipe is quite easy to follow.  It came together so quickly and before long I had me some cookies!

I dug through the depths of my pantry to find my farm animal cookie cutters.  I decided upon pig, duck, and circle short bread.  Oh, and one free-form heart cookie.  They came out too cute for words.  It’s hard for me to eat such adorable cookies, but I’m sure I’ll manage.

Speaking of animal farms, I want to take a trip to an animal sanctuary in the area!  Does anyone know of one that is close to Connecticut?  Or want to take a road trip with me? ;)

    cute! i love cookie cutters! did you actually feel a buzz after eating them, or is it so diluted per cookie that not really…or maybe you can’t separate it from the sugar rush, haha

      It’s actually only a tablespoon of coffee, so it’s probably too diluted! With the amount of cookies I can eat, it would definitely be too hard to separate it from the sugar rush. I kind of cheated here too.. I used Teecino instead of coffee! I couldn’t bare to part with a tablespoon of my favorite coffee because I only have like two tablespoons left! The teecino doesn’t have any caffeine in it!

      By the way, I shot these photos in RAW mode to see if there was a difference. Doesn’t seem so!

      I am not sure!!! I imagine somewhere like William Sonoma or even a craft store!

    I’m guessing you already know about Woodstock Farm Animal Sanctuary. It’s about two hours away, but it’s an awesome place and I’d say it’s worth the trip!
