Cold Weather Comfort Food

Goodness, have I been neglectful or what?  I’ve been eating a lot of delicious food, but most of it has been on the run.  I’ve been quite the busy lady this past week.

Last night I had some company over and we ordered a ton of Thai food to feast on.  I chose the cashew vegetable and tofu with rice. It was quite lovely.  I am obsessed with Thai food!  I eat it once a week, at least!  I keep saying it, but I really do need to learn how to make it on my own!  I tried to make a Thai-styled stir fry a few days ago, but it just did not taste the same.

I made some incredible cookies from Vegan Cookies Invade Your Cookie Jar last night, as well.  These chocolate chip cookies are some of the best cookies I’ve ever had!  They are perfectly crispy on the outside, while maintaining a soft, chewy middle.  I made these as a holiday gift, but my guest and I managed to annihilate quite too many of them.. so I’m going to definitely be making another batch today.  I piled all the cookies up to take a photo of them and it was pretty funny to watch and photograph them all coming down.  I call this next photo “The Leaning Tower of Cookies”.

I woke up this morning to a winter wonderland!  I was doubting that it’d snow at all, but it sure did!  There’s quite a bit over here.  I was in the mood for a tofu scramble.  I had an incredible tofu scramble this past summer when I visited Portland, so I headed into the kitchen to recreate that.  I sliced up some orange bell pepper, shallots, and garlic and threw it into a skillet to saute, while I pressed out the tofu.  In a separate skillet, I pan fried the cubed tofu until it was crispy on the outside.  When it was done, I added it to the bigger skillet with the vegetables and added cumin, red pepper flakes, coriander, paprika, salt, and pepper.

Oh, and while I was doing this, I was also roasted some potatoes in the oven.  I simply cut them into wedges, drizzled them with olive oil, and sprinkled on some salt, pepper, and various herbs.  This was a way more labor intensive breakfast than my usual (english muffin with pb&j), but it was so worth it.  The end result was incredibly delicious.  I mixed it all together on my plate and ate it with a side of avocado and ketchup for dipping.

Before I go, I just want to show you guys this cool reptile I took a picture of this weekend.  I volunteered to take photos of some animals at a nearby farm, which also rescues reptiles, and I just loved this shot.

    That’s my kind of comfort food! I spent the whole day baking (and eating!) cookies, and Ari and I are about to get Thai. Those takeout containers are pretty cool, too! The little things that make me happy…

    oh my frickin gawd i LOVE thai food. I want to start making it too sooo bad…maybe one day wen i have money for all the interesting ingredients. hella deliscious looking tofu scramble as well. I adore the lizard picture! very nice timing
