Merry Christmas!

Hi everyone!  I hope you all had a really wonderful day and continue to have a fabulous night.  I am so thankful I got to spend this incredible day with my family.  I love them so dearly!  I just can’t say it enough.

We started off the morning with my mom’s famous breakfast potatoes.  Actually, she started making them a week or two ago but they sure have been famous since then!  As soon as we finished breakfast, we all headed downstairs to unwrap presents.  While my family unwrapped gifts, I wrapped Pokey up and have him a fancy collar and a cape.  He looked quite adorable, if I do say so myself.

So what’d I get for Christmas?  I have to say, I’m a very lucky girl.  My parent’s got me a new camera bag, a few flannel shirts, some books, and a dehydrator!  My first thought when I unwrapped the dehydrator was MACAROONS!  I ran to the kitchen to see if I had any ingredients but no go, so I’ll have to just do them tomorrow.  I am so excited!  There is so much I want to try out.

We drove over to my Grandma’s house for Christmas lunch and to celebrate with the rest of the family.  I wanted to make some special vegan meal for my sister and I (and everyone else!) to eat, since my sister usually is stuck with mediocre dorm food.  I am obsessed with chickpea cutlets, so I had to make those.  Along with the cutlets, I made rosemary-garlic mashed potatoes and punk rock chickpea gravy.  We both loved the meal!  No one else was adventurous enough to try the cutlets, but the mashed potatoes and gravy were a big hit.

I was so, so surprised and excited to see that my Grandma had made a vegan apple tart for everyone to enjoy!  I was way too full to enjoy a piece right after dinner, but I snagged one for later on tonight.

It was a really great time.  I am so thankful to have such a great family!  I’ll leave you with a photo of my kitty, Zelda.  She’s staying here at my parent’s house for a little, too.  It’s definitely crowded here with my Mom and Dad, Megan and Kristen (sisters), myself, Zelda, Pokey, Astrid and Professor!

    I also made chickpea cutlets, punk rock gravy, and mashed potatoes for Christmas dinner. I almost made roasted brussels, but didn’t have enough time. Great minds think alike, I guess! Gorgeous photos, as always.

    I saw your last post too, and I also moved to NYC in January… a couple years ago though. What part of NYC are you in? I’m in Greenwich Village now, but I’ll be moving again next January.

    All that food looks yummy, nothing would have held me back from the chickpea cutlets! Too bad the rest of your family didn’t want to taste them, my brother is like that for most of my vegan cooking.

    Thanks! Gosh, your photos are amazing. The food looks great, but the puppy looks even greater :) I have such a soft spot for beagles, as I had one growing up.
